For the Brussels Sprouts:

  • 1 pound Brussels sprouts, trimmed and halved
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

For the Honey-Chili Glaze:

  • 1/3 cup honey
  • 2 tablespoons soy sauce
  • 12 teaspoons chili flakes (adjust for spice level)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon minced garlic

Instructions

  • Preheat the Oven:
    • Preheat your oven to 400°F (200°C).
  • Prepare the Chicken:
    • In a bowl, mix the chicken thighs with olive oil, salt, pepper, garlic powder, and onion powder. Rub the seasoning all over the chicken.
  • Prepare the Brussels Sprouts:
    • In another bowl, toss the halved Brussels sprouts with olive oil, salt, and pepper.
  • Bake Chicken and Brussels Sprouts:
    • In a large baking dish or sheet pan, arrange the seasoned chicken thighs skin-side up. Surround them with the Brussels sprouts.
    • Bake in the preheated oven for about 25-30 minutes.
  • Make the Honey-Chili Glaze:
    • While the chicken and Brussels sprouts are baking, whisk together the honey, soy sauce, chili flakes, apple cider vinegar, and minced garlic in a small bowl.
  • Glaze and Finish Baking:
    • After 25-30 minutes, remove the pan from the oven and brush the honey-chili glaze over the chicken and Brussels sprouts.
    • Return to the oven and bake for an additional 10-15 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  • Serve:
    • Remove from the oven and let it rest for a few minutes before serving. Enjoy warm!
