For the Chicken:
- 4 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
For the Brussels Sprouts:
- 1 pound Brussels sprouts, trimmed and halved
- 2 tablespoons olive oil
- Salt and pepper, to taste
For the Honey-Chili Glaze:
- 1/3 cup honey
- 2 tablespoons soy sauce
- 1–2 teaspoons chili flakes (adjust for spice level)
- 1 tablespoon apple cider vinegar
- 1 teaspoon minced garlic
Instructions
- Preheat the Oven:
- Preheat your oven to 400°F (200°C).
- Prepare the Chicken:
- In a bowl, mix the chicken thighs with olive oil, salt, pepper, garlic powder, and onion powder. Rub the seasoning all over the chicken.
- Prepare the Brussels Sprouts:
- In another bowl, toss the halved Brussels sprouts with olive oil, salt, and pepper.
- Bake Chicken and Brussels Sprouts:
- In a large baking dish or sheet pan, arrange the seasoned chicken thighs skin-side up. Surround them with the Brussels sprouts.
- Bake in the preheated oven for about 25-30 minutes.
- Make the Honey-Chili Glaze:
- While the chicken and Brussels sprouts are baking, whisk together the honey, soy sauce, chili flakes, apple cider vinegar, and minced garlic in a small bowl.
- Glaze and Finish Baking:
- After 25-30 minutes, remove the pan from the oven and brush the honey-chili glaze over the chicken and Brussels sprouts.
- Return to the oven and bake for an additional 10-15 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Serve:
- Remove from the oven and let it rest for a few minutes before serving. Enjoy warm!
