- 1 tsp baking powder

- 2 tsp cinnamon
- 1 tsp ground ginger

- 1 cup granulated sugar
- 1 cup light brown sugar
- 4 large eggs
- 2 tsp vanilla extract
- 3 cups grated carrots
- 1/2 cup crushed pineapple (drained)
- 1 cup chopped walnuts
- 16 oz cream cheese
- 1/2 cup unsalted butter
- 4–5 cups powdered sugar
Instructions
- Preheat oven to 350°F and grease two 9-inch cake pans.
- Whisk together flour, baking soda, baking powder, salt, and spices.
- In a large bowl, mix oil, sugars, eggs, and vanilla until smooth.
- Fold dry ingredients into wet, then stir in carrots, pineapple, and walnuts.
- Bake for 35-40 minutes and cool completely.
- Beat cream cheese, butter, powdered sugar, and vanilla to make frosting.
- Frost the cooled layers and serve.
