  • 1 lb Cavatappi pasta
  • 1 lb Colby Jack cheese, grated
  • 1 lb Sharp Cheddar cheese, grated
  • 8 oz Mozzarella cheese, grated
  • 1/2 cup Unsalted butter
  • 1/2 cup All-purpose flour
  • 2 cups Heavy cream
  • 1 cup Evaporated milk
  • 1 tbsp Smoked paprika
  • 1 tbsp Garlic powder
  • 1 tbsp Onion powder
  • Salt and pepper to taste

Instructions

  1. Grate all cheeses and mix together; divide into two portions.
  2. Boil pasta for 2 minutes less than package directions and drain.
  3. Make a roux with butter and flour in a large pan.
  4. Whisk in heavy cream and evaporated milk until thickened.
  5. Add seasonings and half of the cheese mixture to the sauce.
  6. Combine pasta with the cheese sauce.
  7. Layer half the pasta in a dish, top with some cheese, add remaining pasta, and finish with more cheese.
  8. Bake at 375°F for 20-30 minutes until golden.
