Ingredients

Scale

For the Chicken:

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

For the Alfredo Sauce:

  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 teaspoon Cajun seasoning (adjust to taste)
  • 1 tablespoon honey or maple syrup
  • Salt and pepper, to taste

For the Pasta:

  • 8 oz fettuccine or your choice of pasta
  • Fresh parsley, chopped (for garnish)
  • Extra Parmesan cheese, for serving

Instructions

  1. Cook the Pasta:
    1. In a large pot, boil salted water and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Prepare the Chicken:
    1. Season the chicken breasts with Cajun seasoning, salt, and pepper.
    2. In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes per side, or until cooked through and golden brown. Remove from the skillet and let rest before slicing.
  3. Make the Alfredo Sauce:
    1. In the same skillet, reduce the heat to medium and add butter. Once melted, add minced garlic and sauté for about 1 minute until fragrant.
    2. Pour in the heavy cream and bring to a simmer. Stir in Parmesan cheese and Cajun seasoning, and mix until melted and creamy.
    3. Add honey (or maple syrup) for a touch of sweetness. Season with salt and pepper to taste.
  4. Combine:
    1. Toss the cooked pasta in the Alfredo sauce until well coated.
    2. Slice the cooked chicken and arrange it on top of the pasta.
  5. Serve:
    1. Garnish with chopped parsley and additional Parmesan cheese. Serve hot.

Notes

  • You can adjust the level of spiciness by varying the amount of Cajun seasoning or adding crushed red pepper flakes.
  • For a lighter version, consider using half-and-half or a lower-fat cream option.
