- 3 lbs Yukon Gold potatoes, sliced 1/8 inch thick
- 1/4 cup unsalted butter
- 1 small yellow onion, diced
- 3 cloves garlic, minced
- 1/4 cup all-purpose flour
- 1.5 cups whole milk
- 1.5 cups heavy cream
- 2 cups sharp white cheddar cheese, shredded
- 1 cup Gruyere cheese, shredded
- 1 tsp fresh thyme leaves
- 1/2 tsp ground nutmeg
- Salt and black pepper to taste
Instructions
- Preheat oven to 375°F and grease a 9×13 baking dish.
- Sauté onions and garlic in melted butter, then whisk in flour to create a roux.
- Gradually add milk and cream, whisking until thickened.
- Stir in 2/3 of the cheese until melted; season with thyme, nutmeg, salt, and pepper.
- Layer sliced potatoes and cheese sauce in the baking dish.
- Cover with foil and bake for 45 minutes.
- Remove foil, top with remaining cheese, and bake for 25-30 more minutes until golden.
