  • 1/4 cup unsalted butter
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 1.5 cups whole milk
  • 1.5 cups heavy cream
  • 2 cups sharp white cheddar cheese, shredded
  • 1 cup Gruyere cheese, shredded
  • 1 tsp fresh thyme leaves
  • 1/2 tsp ground nutmeg
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 375°F and grease a 9×13 baking dish.
  2. Sauté onions and garlic in melted butter, then whisk in flour to create a roux.
  3. Gradually add milk and cream, whisking until thickened.
  4. Stir in 2/3 of the cheese until melted; season with thyme, nutmeg, salt, and pepper.
  5. Layer sliced potatoes and cheese sauce in the baking dish.
  6. Cover with foil and bake for 45 minutes.
  7. Remove foil, top with remaining cheese, and bake for 25-30 more minutes until golden.
