For the Noodles:
- 8 oz (225 g) rice noodles or your choice of noodles
- 2 tablespoons vegetable oil
- 1 cup bell peppers, sliced
- 1 cup carrots, julienned
- 1 cup snap peas or broccoli florets
- 1/4 cup green onions, chopped
- 1/4 cup cilantro, chopped (for garnish)
For the Spicy Peanut Sauce:
- 1/2 cup (120 g) peanut butter (smooth or crunchy)
- 3 tablespoons soy sauce or tamari
- 2 tablespoons honey or maple syrup
- 2 tablespoons rice vinegar or lime juice
- 1 tablespoon sesame oil
- 1–2 teaspoons sriracha (adjust based on spice preference)
- 1–2 tablespoons water (to thin if needed)
Instructions
- Cook the Noodles:
- Cook the noodles according to package instructions. Drain and rinse under cold water to stop the cooking process. Set aside.
- Prepare the Spicy Peanut Sauce:
- In a medium bowl, combine peanut butter, soy sauce, honey, rice vinegar, sesame oil, and sriracha.
- Whisk until smooth. If the sauce is too thick, add water a tablespoon at a time until you reach your desired consistency.
- Sauté the Vegetables:
- In a large skillet or wok, heat vegetable oil over medium heat.
- Add sliced bell peppers, carrots, and snap peas (or broccoli). Sauté for about 3-5 minutes until just tender.
- Combine Noodles and Sauce:
- Add the cooked noodles to the skillet with the vegetables.
- Pour the spicy peanut sauce over the noodles and toss everything together until well coated and heated through.
- Serve:
- Remove from heat and garnish with chopped green onions and cilantro. Serve immediately, adding additional sriracha if desired for extra heat.
