  • 1 cup bell peppers, sliced
  • 1 cup carrots, julienned
  • 1 cup snap peas or broccoli florets
  • 1/4 cup green onions, chopped
  • 1/4 cup cilantro, chopped (for garnish)

For the Spicy Peanut Sauce:

  • 1/2 cup (120 g) peanut butter (smooth or crunchy)
  • 3 tablespoons soy sauce or tamari
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons rice vinegar or lime juice
  • 1 tablespoon sesame oil
  • 12 teaspoons sriracha (adjust based on spice preference)
  • 12 tablespoons water (to thin if needed)


Instructions

  1. Cook the Noodles:
    1. Cook the noodles according to package instructions. Drain and rinse under cold water to stop the cooking process. Set aside.
  2. Prepare the Spicy Peanut Sauce:
    1. In a medium bowl, combine peanut butter, soy sauce, honey, rice vinegar, sesame oil, and sriracha.
    2. Whisk until smooth. If the sauce is too thick, add water a tablespoon at a time until you reach your desired consistency.
  3. Sauté the Vegetables:
    1. In a large skillet or wok, heat vegetable oil over medium heat.
    2. Add sliced bell peppers, carrots, and snap peas (or broccoli). Sauté for about 3-5 minutes until just tender.
  4. Combine Noodles and Sauce:
    1. Add the cooked noodles to the skillet with the vegetables.
    2. Pour the spicy peanut sauce over the noodles and toss everything together until well coated and heated through.
  5. Serve:
    1. Remove from heat and garnish with chopped green onions and cilantro. Serve immediately, adding additional sriracha if desired for extra heat.
