Ingredients

Scale

For the Salmon:

  • 4 salmon fillets (6 oz each)
  • 3 tablespoons miso paste (white or yellow)
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 2 teaspoons grated fresh ginger
  • Salt and pepper, to taste

For the Broccoli:

  • 4 cups broccoli florets
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Optional: Sesame seeds for garnish

Instructions

  1. Preheat the Oven:
    1. Preheat your oven to 400°F (200°C).
  2. Prepare the Miso Glaze:
    1. In a small bowl, whisk together the miso paste, honey, soy sauce, rice vinegar, sesame oil, and grated ginger until smooth.
  3. Prep the Broccoli:
    1. On a large sheet pan, toss the broccoli florets with olive oil, salt, and pepper. Spread them out in an even layer.
  4. Add the Salmon:
    1. Place the salmon fillets on the sheet pan alongside the broccoli. Season the salmon with salt and pepper, then brush the miso glaze generously over each fillet.
  5. Bake:
    1. Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork, and the broccoli is tender and slightly charred.
  6. Serve:
    1. Remove from the oven and sprinkle with sesame seeds, if desired. Serve immediately.

Notes

  • You can add other vegetables (like bell peppers or snap peas) to the sheet pan if desired.
