Instructions

- Grate fresh carrots and set aside.
- Whisk dry ingredients (flour, leavening, spices) in a bowl.
- Whisk sugars, eggs, oil, and vanilla until smooth.
- Fold dry ingredients into wet, then fold in carrots and nuts.
- Bake for 30-35 minutes until a toothpick comes out clean.
- Cool completely before frosting with a whipped cream cheese and butter mixture.
