- 4–6 Bone-in skin-on chicken thighs
- 1.5 lbs Yukon Gold potatoes
- 2 lemons
- 4 cloves garlic
- 3 tbsp olive oil
- 1 tbsp rosemary
- 1 tbsp thyme
- 1 tsp smoked paprika
- Salt and pepper
Instructions
- Preheat oven to 400F
- Season potatoes with oil, herbs, and garlic
- Pat chicken dry and season
- Assemble in pan
- Roast for 45 minutes
