  • ¾ cup sugar
  • ½ cup unsalted butter, melted and cooled
  • 1 tablespoon vanilla extract
  • 1 ¾ cups all-purpose flour
  • 2 teaspoons baking powder
  • Pinch of salt
  • Powdered sugar for dusting (optional)

Instructions

  • Preheat the pizzelle iron according to the manufacturer’s instructions.
  • In a large mixing bowl, whisk together the eggs and sugar until well combined and pale in color.
  • Slowly drizzle in the melted butter while whisking, then add the vanilla extract and mix until smooth.
  • In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Lightly grease the pizzelle iron if necessary, and place a heaping tablespoon of batter onto the center of each pizzelle mold.
  • Close the iron and cook for 30-45 seconds, or until the pizzelle are golden and crisp. Remove the pizzelle from the iron and allow them to cool on a wire rack.
  • Repeat with the remaining batter. Dust with powdered sugar if desired before serving.
