Description

One-Pot Creamy Sun-Dried Tomato Orzo is a comforting, rich dish that combines al dente orzo pasta with creamy sauce, flavorful sun-dried tomatoes, spinach, and herbs. Perfect for a quick weeknight dinner, it’s both satisfying and easy to prepare!

Ingredients

Scale
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped (packed in oil)
  • 1 teaspoon Italian seasoning
  • 1 cup orzo pasta
  • 3 cups vegetable broth (or chicken broth)
  • 1 cup fresh spinach, chopped
  • 1/2 cup heavy cream (or coconut cream for a dairy-free option)
  • 1/2 cup grated Parmesan cheese (plus more for serving)
  • Salt and pepper, to taste
  • Fresh basil or parsley, for garnish

Instructions

  1. Sauté Aromatics:
    1. In a large pot, heat the olive oil over medium heat. Add the minced garlic and sun-dried tomatoes. Sauté for about 2-3 minutes until fragrant.
  2. Add Orzo and Broth:
    1. Stir in the Italian seasoning and orzo pasta, mixing well. Pour in the vegetable broth and bring to a boil.
  3. Cook the Orzo:
    1. Reduce the heat and let it simmer, stirring occasionally, until the orzo is al dente and most of the liquid is absorbed, about 10-12 minutes.
  4. Incorporate Cream and Spinach:
    1. Stir in the chopped spinach and heavy cream. Cook for an additional 2-3 minutes until the spinach wilts and the mixture is creamy.
  5. Add Cheese:
    1. Remove from heat and fold in the grated Parmesan cheese. Season with salt and pepper to taste.
  6. Serve:
    1. Serve warm, garnished with additional Parmesan cheese and fresh herbs.

Notes

  • Feel free to add cooked chicken or shrimp for extra protein.
  • You can substitute spinach with other greens like kale or arugula.
