Ingredients
Scale
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 cup sun-dried tomatoes, chopped (packed in oil)
- 1 teaspoon Italian seasoning
- 1 cup orzo pasta
- 3 cups vegetable broth (or chicken broth)
- 1 cup fresh spinach, chopped
- 1/2 cup heavy cream (or coconut cream for a dairy-free option)
- 1/2 cup grated Parmesan cheese (plus more for serving)
- Salt and pepper, to taste
- Fresh basil or parsley, for garnish
Instructions
- Sauté Aromatics:
- In a large pot, heat the olive oil over medium heat. Add the minced garlic and sun-dried tomatoes. Sauté for about 2-3 minutes until fragrant.
- Add Orzo and Broth:
- Stir in the Italian seasoning and orzo pasta, mixing well. Pour in the vegetable broth and bring to a boil.
- Cook the Orzo:
- Reduce the heat and let it simmer, stirring occasionally, until the orzo is al dente and most of the liquid is absorbed, about 10-12 minutes.
- Incorporate Cream and Spinach:
- Stir in the chopped spinach and heavy cream. Cook for an additional 2-3 minutes until the spinach wilts and the mixture is creamy.
- Add Cheese:
- Remove from heat and fold in the grated Parmesan cheese. Season with salt and pepper to taste.
- Serve:
- Serve warm, garnished with additional Parmesan cheese and fresh herbs.
Notes
- Feel free to add cooked chicken or shrimp for extra protein.
- You can substitute spinach with other greens like kale or arugula.
