Ingredients

  • 1 cup Cane sugar
  • 1/2 cup Brown sugar
  • 1 tsp Baking soda
  • 1 tsp Baking powder
  • 1/2 tsp Salt
  • 2 tsp Ground cinnamon
  • 1/2 tsp Ground ginger
  • 1/2 cup Neutral oil
  • 1 tbsp Flaxseed meal + 3 tbsp water
  • 2 cups Finely grated carrots
  • 1/2 cup Chopped walnuts

Instructions

  1. Preheat oven to 350°F and grease a cake pan.
  2. Prepare flax egg and mix with sugar, oil, and vanilla in a large bowl.
  3. Stir in grated carrots.
  4. Sift in dry ingredients and fold until just combined.
  5. Fold in walnuts and bake for 35-40 minutes.
  6. Cool completely before frosting.
