A simple, moist, and spice-filled vegan carrot cake made in just one bowl for minimal cleanup and maximum flavor.
Ingredients

- 2 cups All-purpose flour
- 1 cup Cane sugar
- 1/2 cup Brown sugar
- 1 tsp Baking soda
- 1 tsp Baking powder
- 1/2 tsp Salt
- 2 tsp Ground cinnamon
- 1/2 tsp Ground ginger
- 1/2 cup Neutral oil
- 1 tbsp Flaxseed meal + 3 tbsp water
- 2 cups Finely grated carrots
- 1/2 cup Chopped walnuts
Instructions
- Preheat oven to 350°F and grease a cake pan.
- Prepare flax egg and mix with sugar, oil, and vanilla in a large bowl.
- Stir in grated carrots.
- Sift in dry ingredients and fold until just combined.
- Fold in walnuts and bake for 35-40 minutes.
- Cool completely before frosting.
