Ingredients

  • 2 cups Rolled Oats
  • 2 large Honeycrisp or Granny Smith apples, diced
  • 2 cups Milk of choice
  • 2 large Eggs
  • 1/3 cup Maple syrup
  • 2 tbsp Melted coconut oil or butter
  • 1 tsp Baking powder
  • 1 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 1 tsp Vanilla extract
  • 1/2 cup Chopped pecans or walnuts

Instructions

  1. Preheat oven to 375°F and grease a 9×9 baking dish.
  2. Mix oats, baking powder, spices, and half the nuts in a large bowl.
  3. Whisk milk, eggs, syrup, oil, and vanilla in another bowl.
  4. Place diced apples in the baking dish, cover with dry oats, then pour liquid over.
  5. Top with remaining nuts and bake for 35-40 minutes until set.
