A warm, comforting, and healthy baked oatmeal dish loaded with fresh apples, cinnamon, and walnuts.
Ingredients

- 2 cups Rolled Oats
- 2 large Honeycrisp or Granny Smith apples, diced
- 2 cups Milk of choice
- 2 large Eggs
- 1/3 cup Maple syrup
- 2 tbsp Melted coconut oil or butter
- 1 tsp Baking powder
- 1 tsp Cinnamon
- 1/2 tsp Nutmeg
- 1 tsp Vanilla extract
- 1/2 cup Chopped pecans or walnuts
Instructions
- Preheat oven to 375°F and grease a 9×9 baking dish.
- Mix oats, baking powder, spices, and half the nuts in a large bowl.
- Whisk milk, eggs, syrup, oil, and vanilla in another bowl.
- Place diced apples in the baking dish, cover with dry oats, then pour liquid over.
- Top with remaining nuts and bake for 35-40 minutes until set.
