Ingredients
1 (3-4 pounds) beef tenderloin
2 tablespoons olive oil
2 teaspoons salt
1 teaspoon black pepper
4 cloves garlic, minced
2 tablespoons fresh rosemary, chopped
2 tablespoons fresh thyme, chopped
1 cup beef broth
2 tablespoons Dijon mustard
2 tablespoons Worcestershire sauce
Instructions
1. Preheat your oven to 400°F (200°C).
2. In a small bowl, mix together the olive oil, salt, pepper, garlic, rosemary, and thyme.
3. Rub this mixture all over the beef tenderloin.
4. In a large oven-safe skillet, sear the tenderloin over medium-high heat until browned on all sides, about 3-4 minutes per side.
5. Remove the skillet from the heat and add the beef broth, Dijon mustard, and Worcestershire sauce.
6. Transfer the skillet to the preheated oven and roast for about 20-25 minutes for medium rare, or until the internal temperature reaches your desired doneness.
7. Remove from the oven and let it rest for at least 10 minutes before slicing.
