- 1 lb Elbow Macaroni
- 8 oz Extra Sharp White Cheddar
- 8 oz Gruyere
- 8 oz Mozzarella
- 4 oz Cream Cheese
- 4 oz Monterey Jack
- 1/2 cup Sour Cream
- 4 cups Whole Milk
- 1/2 cup Unsalted Butter
- 1/4 cup All-Purpose Flour
- 1 tsp Smoked Paprika
- 1/2 tsp Garlic Powder
- 1 cup Panko Breadcrumbs
Instructions
- Boil pasta for 2 minutes less than al dente.
- Shred all cheeses and mix, reserving 1 cup for the top.
- Make a roux with butter and flour, then whisk in milk to create a béchamel.
- Stir in cream cheese, sour cream, and shredded cheeses until melted.
- Fold pasta into the sauce and transfer to a baking dish.
- Top with buttered panko and remaining cheese.
- Bake at 350°F for 25-30 minutes until golden.
