Ingredients

  • 1/2 cup sweet corn kernels
  • 1/4 cup mayonnaise
  • 2 tbsp sour cream or Mexican crema
  • 1 tbsp fresh lime juice
  • 1/2 tsp chili powder
  • 2 tbsp crumbled Cotija cheese
  • 1 tbsp chopped fresh cilantro
  • 1/2 jalapeno, finely minced
  • Smoked paprika for garnish

Instructions

  1. Hard boil the eggs for 12 minutes, then shock in an ice bath.
  2. Char the corn in a hot skillet until golden brown.
  3. Halve the eggs and combine yolks with mayo, sour cream, lime, and chili powder.
  4. Fold some corn and jalapeno into the yolk mixture.
  5. Pipe the filling into egg whites and garnish with remaining corn, Cotija, and cilantro.
