A robust, garlic-forward Mediterranean pasta salad packed with massaged kale, chickpeas, and feta cheese.
Ingredients
Scale
- 12 oz Rotini pasta
- 1 bunch curly kale
- 8 cloves garlic
- 1/2 cup sun-dried tomatoes
- 1/2 cup Kalamata olives
- 1 can chickpeas
- 1/2 cup crumbled feta
- 1/4 red onion
- 1/3 cup extra virgin olive oil
- 1 lemon, juiced
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes
Instructions
- Boil pasta al dente, drain, and rinse with cold water.
- Whisk together olive oil, lemon juice, minced garlic, and herbs for the dressing.
- Massage chopped kale with salt and oil until tender.
- Combine pasta, kale, chickpeas, tomatoes, olives, and onion in a large bowl.
- Toss with dressing and top with feta and optional fried garlic chips.
