Ingredients

  • 12 oz Rotini pasta
  • 1 bunch curly kale
  • 8 cloves garlic
  • 1/2 cup sun-dried tomatoes
  • 1/2 cup Kalamata olives
  • 1 can chickpeas
  • 1/2 cup crumbled feta
  • 1/4 red onion
  • 1/3 cup extra virgin olive oil
  • 1 lemon, juiced
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes

Instructions

  1. Boil pasta al dente, drain, and rinse with cold water.
  2. Whisk together olive oil, lemon juice, minced garlic, and herbs for the dressing.
  3. Massage chopped kale with salt and oil until tender.
