- 15 oz kidney beans
- 1 cup cherry tomatoes
- 1/2 cup cucumber
- 1/4 cup red onion
- 1/3 cup feta
- 1/4 cup parsley
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1 clove garlic
Instructions
- Rinse beans
- Whisk dressing ingredients
- Combine all vegetables and beans
- Toss with dressing
- Fold in feta
