  • 1 cup dry white wine (optional)
  • 2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme)
  • 2 bay leaves
  • Salt and freshly ground black pepper, to taste

For the Topping:

  • 1 baguette or crusty bread, sliced
  • 2 cups shredded Gruyère cheese (or Swiss cheese)
  • Fresh parsley, chopped (for garnish)

Instructions

For the Soup:

  1. Caramelize the Onions:
    • In a large pot or Dutch oven, melt the butter and olive oil over medium heat.
    • Add the sliced onions and sprinkle with sugar. Cook, stirring occasionally, for about 30-40 minutes, until the onions are deeply caramelized.
  2. Add Broth and Wine:
    • Once the onions are caramelized, add the white wine (if using) and scrape up any browned bits from the bottom of the pot. Let it simmer for about 5 minutes.
    • Pour in the beef broth and add thyme and bay leaves. Bring to a simmer and cook for another 15-20 minutes. Season with salt and pepper.
  3. Prepare the Bread:
    • While the soup is simmering, toast the bread slices under the broiler until golden brown.

To Assemble:

  1. Ladle Soup:
    • Remove bay leaves from the soup. Ladle the soup into oven-safe bowls or ramekins.
  2. Top with Bread and Cheese:
    • Float a piece of toasted bread on top of each bowl of soup. Generously sprinkle with shredded Gruyère cheese.
  3. Broil:
    • Place the bowls under the broiler for 3-5 minutes, or until the cheese is bubbly and golden.
  4. Serve:
    • Garnish with chopped parsley and serve immediately.
