- 12 large eggs
- 1/2 cup mayonnaise
- 1 tbsp Dijon mustard
- 1 tbsp pickle juice
- 2 tbsp cayenne pepper
- 1 tbsp brown sugar
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 2 tbsp vegetable oil
- 12 pieces popcorn chicken
- Dill pickle slices for garnish
Instructions
- Boil eggs for 12 minutes, then chill in an ice bath.
- Peel and slice eggs, removing yolks into a bowl.
- Mash yolks with mayo, mustard, pickle juice, and a pinch of spices.
- Mix oil, remaining cayenne, paprika, and brown sugar to make the hot oil.
- Pipe yolk mixture back into egg whites.
- Top each with a piece of crispy chicken and a drizzle of the spicy oil.
