- 1 Teaspoon Dried Thyme
- Fresh Parsley for garnish
Instructions
- Preheat oven to 400°F and line a baking sheet.
- Peel and cube sweet potatoes into 1-inch pieces.
- Whisk together melted butter, oil, minced garlic, and seasonings.
- Toss potatoes in the garlic-butter mixture and spread in a single layer on the tray.
- Roast for 25-30 minutes, flipping halfway through, until golden and tender.
