- 12 large eggs
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 teaspoon apple cider vinegar
- 1/4 teaspoon smoked paprika
- 1 cup Panko breadcrumbs
- 1/2 cup all-purpose flour
- 2 beaten eggs (for breading)
- 1/2 cup Chow Chow relish
- Vegetable oil for frying
- Salt and pepper to taste
- Fresh chives
Instructions
- Hard boil 12 eggs, peel, and separate yolks from whites.
- Dredge whites in flour, egg wash, and Panko.
- Fry whites in 350°F oil until golden brown; drain on paper towels.
- Mix yolks with mayo, mustard, vinegar, and spices until smooth.
- Pipe yolk mixture into fried whites and top with Chow Chow relish.
