Instructions
Prep (20 min) – Preheat oven to 350°F (175°C). Grease and line a 9-inch springform pan. Grate zucchini, press out excess moisture, zest and juice lemons, and bring all cold ingredients to room temperature.
Dry Ingredients (10 min) – Whisk almond flour, coconut sugar, baking soda, salt, cinnamon, and nutmeg. Sift for smooth texture. Stir in poppy seeds or almonds if using.
Wet Ingredients (12 min) – Whisk eggs until pale. Add yogurt, maple syrup, coconut oil, vanilla, lemon juice, and lemon zest. Mix until smooth. Stir in vanilla bean paste and lemon extract if using.
Combine (8 min) – Fold zucchini into wet mixture. Add to dry ingredients and gently fold until just combined.
Bake (45–52 min) – Pour batter into pan, smooth top, and tap pan to release air bubbles. Bake until golden and set, toothpick comes out with moist crumbs (internal temp 200–205°F / 93–96°C).
Cool (75 min) – Cool in pan 20 min, then transfer to wire rack. Rest 4–6 hours before glazing for best flavor and texture.
Notes
Use young, tender zucchini for best texture.
Don’t oversqueeze zucchini; some moisture is beneficial.
Flavor intensifies after 24 hours.
