Description

A rich, fudgy, and moist chocolate cake made with flaxseeds and avocado, offering a guilt-free indulgence packed with healthy fats, fiber, and antioxidants. This flourless, gluten-free treat is perfect for anyone seeking a nutritious dessert that doesn’t compromise on flavor.

Ingredients

Scale

2 medium ripe avocados (about 300g), mashed
3 tbsp ground flaxseed
½ cup water (for flax eggs)
½ cup + 2 tbsp Dutch-process cocoa powder (unsweetened)
1 cup almond flour (112g)
⅓ cup maple syrup
1¼ tsp baking powder
Optional: pinch of salt, vanilla extract, dark chocolate chips

Instructions

Preheat the oven to 350°F (175°C). Grease and line a loaf pan or 8-inch cake pan.
Prepare flax eggs: Mix ground flaxseed with water and let sit for 5–10 minutes until gel-like.
Mash avocados until smooth (or blend in a food processor).
Combine wet ingredients: In a large bowl or food processor, mix mashed avocado, flax eggs, and maple syrup until smooth.
Add dry ingredients: Stir in cocoa powder, almond flour, baking powder, and optional salt or vanilla. Mix until fully combined.
Transfer to pan and smooth the top. Optional: sprinkle dark chocolate chips on top.
Bake for 30–35 minutes, or until a toothpick inserted comes out with a few moist crumbs.
Cool completely in the pan before slicing. The texture improves after chilling.

Notes

Substitutions:
Avocado can be replaced with mashed banana (will affect flavor).
Maple syrup can be substituted with date syrup or honey.
Use chia seeds in place of flaxseeds (same ratio).
Storage:
Store in the fridge for up to 5 days or freeze for up to 2 months.
Texture improves after chilling overnight.
For best results:
Use very ripe avocados.
Freshly grind flaxseeds for optimal binding.
Use spoon-and-level method for measuring flour.
