Description

Ingredients

  • 1 lb Rotini or Macaroni pasta
  • 1.5 cups Mayonnaise
  • 1/2 cup Sour cream
  • 2 tbsp Apple cider vinegar
  • 1 tbsp Yellow mustard
  • 1 tbsp Sugar
  • 1 cup Diced celery
  • 1 cup Diced red bell pepper
  • 1/2 cup Diced red onion
  • 1/4 cup Fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Boil pasta in salted water until al dente.
  2. Drain and rinse with cold water to stop cooking.
  3. Whisk together mayo, sour cream, vinegar, mustard, and sugar.
  4. Toss pasta with 3/4 of the dressing and diced vegetables.
  5. Chill in the refrigerator for at least 2 hours.
  6. Add remaining dressing before serving and garnish with herbs.
