- 1 lb (450g) boneless, skinless chicken breasts
- 4 cups chicken broth
- 1 packet ranch seasoning mix
- 8 oz (225g) cream cheese, cubed
- 1 cup shredded cheddar cheese
- 1 cup cooked bacon, crumbled
- 1 cup chopped green onions
- 1 cup celery, diced
- 1 cup carrots, diced
- Salt and pepper, to taste
Instructions
- Cook the Chicken: In a large pot, add chicken breasts and cover with chicken broth. Bring to a boil, then reduce the heat and simmer for 20-25 minutes until the chicken is cooked through. Remove the chicken and shred it with two forks.
- Sauté Vegetables: In the same pot, add chopped celery and carrots. Cook until they are tender, about 5-7 minutes.
- Combine Ingredients: Return the shredded chicken to the pot. Add ranch seasoning, cream cheese, and stir until melted and combined.
- Add Cheese and Bacon: Stir in shredded cheddar cheese until melted. Add crumbled bacon and chopped green onions, and mix well.
- Season: Taste the soup and add salt and pepper as needed.
- Serve: Serve hot, garnished with extra green onions or bacon if desired.
