Ingredients
2 cups (480g) cottage cheese (full-fat or low-fat)
2½ cups (250g) old-fashioned rolled oats (divided)
3 large eggs (room temperature)
½ cup (120ml) pure maple syrup (Grade A dark amber)
⅓ cup (80ml) melted coconut oil (virgin unrefined)
2 teaspoons pure vanilla extract
1 teaspoon ground cinnamon (Ceylon preferred)
½ teaspoon baking powder
½ teaspoon fine sea salt
¾ cup (130g) mini chocolate chips (dark or semi-sweet)
¼ cup (30g) additional oats (for topping)

¼ cup (60g) almond flour
2 tablespoons chia seeds
¼ cup (30g) chopped walnuts
1 tablespoon orange zest
¼ teaspoon almond extract
2 tablespoons ground flaxseed
¼ cup (30g) dried cranberries

Instructions
Prep – Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving overhang for easy removal. Lightly greas with coconut oil.
Prepare oats – Reserve ¼ cup oats for topping. Pulse remaining 2¼ cups oats in a food processor 8–10 times until roughly chopped. Transfer to a large mixing bowl. Add cinnamon, baking powder, and salt; whisk to combine.
Mix wet ingredients – In a separate bowl, whisk cottage cheese until smooth. Add eggs one at a time, whisking after each addition. Whisk in maple syrup, melted coconut oil, and vanilla extract until emulsified. Add any liquid flavorings if using.
Combine – Fold wet ingredients into oat mixture until just combined. Gently fold in chocolate chips and any optional mix-ins.
Assemble – Spread batter evenly in prepared pan. Sprinkle with reserved oats and extra toppings if desired. Lightly press toppings into surface.
Bake – Bake 35–40 minutes, until golden brown and center is set (internal temp ~180°F / 82°C).
Cool & Cut – Cool in pan for at least 2 hours. Lift out using parchment overhang and cut into 12–16 bars with a sharp knife.
Notes
Use room temperature cottage cheese and eggs for best texture.
If cottage cheese is watery, drain briefly before using.
Toss chocolate chips with a little oat mixture before folding in to prevent sinking.
For gluten-free version, use certified gluten-free oats.
Storage: 4 days at room temp, 1 week in fridge, or freeze up to 3 months.
