  • 3 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 tbsp ground cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger
  • 1/2 tsp salt
  • 2 tsp vanilla extract

Instructions

  1. Roast and puree the sweet potatoes.
  2. Preheat oven to 350°F and grease two loaf pans.
  3. Whisk flour, leavening agents, and spices in a bowl.
  4. Mix puree, sugars, oil, eggs, and vanilla in another bowl.
  5. Combine wet and dry ingredients until just mixed.
  6. Create a cinnamon-sugar mixture for the swirl.
  7. Layer batter and cinnamon-sugar in the pans.
  8. Swirl the top with a knife.
  9. Bake for 55-65 minutes.
  10. Cool on a wire rack before slicing.
