- 2 cups Sweet Potato puree
- 3 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 3 large eggs
- 1 tsp baking soda
- 1 tsp baking powder
- 2 tbsp ground cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp ginger
- 1/2 tsp salt
- 2 tsp vanilla extract
Instructions
- Roast and puree the sweet potatoes.
- Preheat oven to 350°F and grease two loaf pans.
- Whisk flour, leavening agents, and spices in a bowl.
- Mix puree, sugars, oil, eggs, and vanilla in another bowl.
- Combine wet and dry ingredients until just mixed.
- Create a cinnamon-sugar mixture for the swirl.
- Layer batter and cinnamon-sugar in the pans.
- Swirl the top with a knife.
- Bake for 55-65 minutes.
- Cool on a wire rack before slicing.
