  • 1 lb (450g) cooked crawfish tails (thawed if frozen)
  • 1 can (10 oz) diced tomatoes and green chiles (Rotel)
  • 1 block (8 oz) cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup green onions, sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Cajun seasoning (adjust to taste)
  • Salt and pepper, to taste
  • Tortilla chips or bread, for serving

Instructions

  1. Prep the Ingredients:
    1. If using frozen crawfish tails, thaw and drain them. Set aside.
    2. In a mixing bowl, combine the cream cheese, garlic powder, onion powder, Cajun seasoning, salt, and pepper. Mix until well combined.
  2. Combine Ingredients:
    1. Add the crawfish tails, diced tomatoes and green chiles, green onions, and both types of cheese to the bowl with the cream cheese mixture. Stir until everything is evenly incorporated.
  3. Bake:
    1. Preheat your oven to 350°F (175°C).
    2. Transfer the mixture to a baking dish and spread it evenly.
    3. Bake in the preheated oven for about 20-25 minutes, or until the dip is bubbly and the cheese is melted.
  4. Serve:
    1. Remove from the oven and let cool slightly. Serve warm with tortilla chips or bread for dipping.

Notes

  • You can add jalapeños for an extra kick!
