  • 1 cup (120g) cashews, finely chopped
  • 1/2 cup (60g) panko breadcrumbs
  • 2 tablespoons Dijon mustard
  • Salt and pepper, to taste
  • 1 tablespoon olive oil

For the Roasted Asparagus:

  • 1 lb (450g) asparagus, trimmed
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder (optional)
  • Lemon wedges, for serving

Instructions

  1. Preheat the Oven:
    1. Preheat your oven to 400°F (200°C).
  2. Prepare the Asparagus:
    1. On a large baking sheet, arrange the trimmed asparagus. Drizzle with olive oil and season with salt, pepper, and garlic powder (if using). Toss to coat.
    2. Roast in the preheated oven for about 10 minutes while you prepare the cod.
  3. Prepare the Cod:
    1. Season the cod fillets with salt and pepper on both sides.
    2. In a small bowl, spread Dijon mustard over the top of each cod fillet.
    3. In another bowl, combine the chopped cashews and panko breadcrumbs. Press the mixture onto the mustard-coated side of each fillet to form a crust.
  4. Bake the Cod:
    1. After the asparagus has been roasting for 10 minutes, push the asparagus to one side of the baking sheet to make room for the cod.
    2. Drizzle the cod fillets with olive oil and place them on the baking sheet alongside the asparagus.
    3. Return the baking sheet to the oven and bake for an additional 12-15 minutes, or until the cod is cooked through and flakes easily with a fork, and the asparagus is tender.
