- 1 lb (450g) asparagus, trimmed
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1 teaspoon garlic powder (optional)

Instructions
- Preheat the Oven:
- Preheat your oven to 400°F (200°C).
- Prepare the Asparagus:
- On a large baking sheet, arrange the trimmed asparagus. Drizzle with olive oil and season with salt, pepper, and garlic powder (if using). Toss to coat.
- Roast in the preheated oven for about 10 minutes while you prepare the cod.
- Prepare the Cod:
- Season the cod fillets with salt and pepper on both sides.
- In a small bowl, spread Dijon mustard over the top of each cod fillet.
- In another bowl, combine the chopped cashews and panko breadcrumbs. Press the mixture onto the mustard-coated side of each fillet to form a crust.
- Bake the Cod:
- After the asparagus has been roasting for 10 minutes, push the asparagus to one side of the baking sheet to make room for the cod.
- Drizzle the cod fillets with olive oil and place them on the baking sheet alongside the asparagus.
- Return the baking sheet to the oven and bake for an additional 12-15 minutes, or until the cod is cooked through and flakes easily with a fork, and the asparagus is tender.
- Serve:
- Plate the cashew-crusted cod with roasted asparagus. Serve with lemon wedges for added flavor.
