Ingredients

  • 2 tbsp vegetable oil
  • 1 tsp vanilla extract
  • 3/4 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp salt
  • 2 cups finely grated carrots
  • 8 oz cream cheese
  • 4 tbsp butter
  • 1 cup powdered sugar

Instructions

  1. Preheat oven to 375°F and line a 10×15 pan with parchment.
  2. Beat eggs for 5 minutes, then add sugar, oil, and vanilla.
  3. Fold in dry ingredients and grated carrots.
  4. Bake for 10-13 minutes.
  5. Immediately invert onto a towel dusted with powdered sugar and roll up while hot.
  6. Cool completely, then unroll and spread with cream cheese frosting.
  7. Re-roll, chill for 1 hour, and serve.
