- 2 cups all-purpose flour
- 1 cup almonds, toasted
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a mixing bowl, combine flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the eggs, vanilla extract, and almond extract.
- Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
- Fold in the toasted almonds until evenly distributed.
- Divide the dough in half and shape each half into a log about 12 inches long. Place the logs on the prepared baking sheet.
- Bake for 25-30 minutes, or until golden brown. Remove from the oven and let cool for 10 minutes.
- Carefully slice each log diagonally into 1/2-inch thick pieces. Lay the slices cut-side down on the baking sheet.
- Bake again for 10-15 minutes until crisp and golden. Let cool completely on a wire rack.
