Description

These Sweet & Tangy Raspberry Cream Cheese Bites combine a crispy pastry shell with a smooth and creamy filling, perfectly balanced with fresh raspberries. They make an easy and delicious dessert or snack for any occasion, whether it’s a party, brunch, or family gathering.

Ingredients

Scale

For the Pastry:

  • 1 sheet puff pastry (store-bought or homemade)
  • 1 egg (for egg wash)

For the Cream Cheese Filling:

  • 8 oz (226g) cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tbsp heavy cream (optional for extra creaminess)

For the Raspberry Topping:

  • 1/2 cup fresh raspberries (or raspberry preserves)
  • 2 tbsp granulated sugar (adjust to taste)
  • 1 tbsp lemon juice (optional for extra tang)

Instructions

  • Preheat Oven: Preheat your oven to 375°F (190°C).
  • Prepare Pastry: Roll out the puff pastry sheet on a lightly floured surface. Use a knife to cut it into small squares (about 2 inches by 2 inches).
  • Make Cream Cheese Filling: In a medium bowl, beat the softened cream cheese with the powdered sugar, vanilla extract, and heavy cream (if using) until smooth and creamy.
  • Assemble Bites: Place a small spoonful of the cream cheese mixture in the center of each pastry square. Fold the corners of the pastry over the filling to create little pockets or “bites”. Use a fork to crimp the edges and seal.
  • Egg Wash: Beat the egg and brush it over the top of each pastry bite for a golden, crispy finish.
  • Bake: Place the filled pastry bites on a baking sheet lined with parchment paper. Bake for 12-15 minutes or until golden brown and puffed up.
  • Prepare Raspberry Topping: While the bites are baking, prepare the raspberry topping. If using fresh raspberries, simply crush them lightly with a fork and stir in the sugar and lemon juice. If using raspberry preserves, warm them slightly in a saucepan to make them easier to spread.
  • Serve: Once the bites are baked, let them cool slightly. Top each bite with a spoonful of the raspberry mixture, then serve immediately.

Notes

  • Make Ahead: You can prepare the cream cheese filling and store it in the refrigerator a day ahead of time. Assemble and bake the bites just before serving.
  • Flavor Variations: Add a pinch of cinnamon or nutmeg to the cream cheese mixture for extra warmth and spice. You can also experiment with other berries like strawberries or blueberries.
  • Vegan Option: Use dairy-free cream cheese and puff pastry to make this recipe vegan-friendly.
  • Freezing: These bites freeze well. After assembling, freeze them on a baking sheet, then transfer to a zip-top bag for up to 2 weeks. Bake from frozen, adding a few extra minutes to the cooking time.
