Instructions

STEP 1: PREPARE THE DOUGH
In a large mixing bowl, cream together the butter and sugar until light and fluffy.
Beat in the egg and vanilla extract until well combined.
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until a smooth dough forms.
Divide the dough into two portions, wrap in plastic wrap, and refrigerate for at least 1 hour, or until firm.
STEP 2: PREHEAT & PREP
Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper or silicone baking mats.
Crush the hard candies into small pieces (keeping colors separate) using a rolling pin or food processor.
STEP 3: SHAPE THE COOKIES
Roll out the chilled dough on a floured surface to about 1/4-inch thickness.
Use a large cookie cutter to cut out shapes, then use a smaller cutter to remove the center, creating a “window.” Transfer the cookies to the prepared baking sheets.
Fill the center of each cookie with crushed candy, being careful not to overfill.
STEP 4: BAKE & COOL
Bake the cookies for 8-10 minutes, or until the edges are lightly golden and the candy centers are melted and bubbly.
Allow the cookies to cool completely on the baking sheet before transferring to a wire rack. The candy will harden as the cookies cool.
STEP 5: DECORATE (OPTIONAL)
Dust the cookies with powdered sugar, sprinkle with edible glitter, or add sprinkles for extra flair.
