Instructions

Step 1: Prepare the Sugar Cookie Dough

  1. Mix dry ingredients: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  2. Cream butter and sugar: In a large mixing bowl, beat the softened butter and granulated sugar together with an electric mixer on medium speed until the mixture is light and fluffy. This will take about 3 minutes.
  3. Add the egg and extracts: Beat in the egg, vanilla extract, and almond extract (if using). Continue mixing until everything is well incorporated.
  4. Combine wet and dry ingredients: Gradually add the dry ingredients to the butter mixture. Mix on low speed until just combined. Be careful not to overmix the dough, as this can result in tough cookies.
  5. Chill the dough: Divide the dough into two equal portions. Shape each portion into a disk and wrap it in plastic wrap. Chill in the refrigerator for at least one hour. Chilling the dough helps prevent the cookies from spreading too much during baking and makes it easier to roll out.

Step 2: Prepare the Stained Glass Center
