Shepherd’s Pie Soup

Ingredients

For the Soup Base:
1 lb ground beef or ground lamb
1 tablespoon olive oil
1 medium onion, diced
2 carrots, peeled and diced
2 celery stalks, diced
2 cloves garlic, minced
3 cups beef broth
1 cup water
1 tablespoon tomato paste
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon dried rosemary
1/2 teaspoon smoked paprika
Salt and pepper, to taste
For the Mashed Potato Topping (optional):
2 cups mashed potatoes (store-bought or homemade)
1/2 cup shredded cheddar cheese
2 tablespoons heavy cream
Optional Add-Ins:
1 cup frozen peas (add in the last 5 minutes of cooking)
1/2 cup corn kernels
