Ingredients
For the Base:
- 1 1/2 cups digestive biscuits (or graham crackers), crushed
- 1/4 cup unsalted butter, melted
- 1/4 cup granulated sugar
For the Pistachio Cheesecake:
- 8 oz (225 g) cream cheese, softened
- 1/4 cup granulated sugar
- 1/4 cup pistachio paste
- 1/2 tsp vanilla extract
- 1/4 cup heavy cream
- 1 tsp gelatin powder
- 2 tbsp cold water
For the Raspberry Center:
- 1/2 cup fresh or frozen raspberries
- 2 tbsp granulated sugar
- 1 tbsp water
- 1 tsp gelatin powder
For the Green Glaze:
- 1/2 cup water
- 1/2 cup granulated sugar
- 1/2 cup sweetened condensed milk
- 1/2 cup white chocolate, melted
- 2 tsp gelatin powder
- Green gel food coloring
For Decoration:
- Edible gold leaf
- Crushed pistachios
Instructions
- Prepare the Base:
- In a medium bowl, combine the crushed digestive biscuits (or graham crackers), melted butter, and sugar. Stir until the mixture resembles wet sand.
- Press the mixture into the bottom of dome molds or individual cheesecake pans to form a firm base. Chill in the fridge for at least 30 minutes to set.
- Prepare the Raspberry Center:
- In a small saucepan, combine raspberries, sugar, and water. Heat over medium heat, mashing the raspberries as they soften. Bring to a simmer and cook for 5 minutes.
- Stir in the gelatin powder, mix well, and allow to cool before filling the center of the cheesecake domes.
- Make the Pistachio Cheesecake:
- In a large bowl, beat softened cream cheese with sugar, pistachio paste, and vanilla extract until smooth and creamy.
- In a separate bowl, dissolve gelatin in cold water and let it bloom for a few minutes. Then, gently heat the mixture to dissolve the gelatin and add it to the cream cheese mixture.
- Whip the heavy cream and fold it into the cream cheese mixture until fully combined.
- Assemble the Domes:
- Spoon the pistachio cheesecake mixture over the chilled base in the dome molds, leaving a small space at the center for the raspberry filling.
- Add a spoonful of raspberry mixture to the center of each dome. Freeze for at least 4 hours or until completely set.
- Prepare the Green Glaze:
- In a small saucepan, combine water, sugar, and sweetened condensed milk. Heat over medium heat, stirring until the sugar dissolves.
- Stir in the melted white chocolate and gelatin mixture, and then add a few drops of green gel food coloring until you achieve the desired shade.
- Glaze the Domes:
- Once the cheesecake domes have set, carefully remove them from the molds and place them on a wire rack over a tray.
- Pour the green glaze over the domes, ensuring they are evenly coated. Let the glaze set for about 30 minutes.
- Decorate and Serve:
- Garnish the domes with edible gold leaf and crushed pistachios for a beautiful finishing touch.
- Serve chilled for the best texture and flavor.

- These domes can be made ahead of time and stored in the freezer for up to 1 week before glazing and serving.
