For the Base:

  • 1 1/2 cups digestive biscuits (or graham crackers), crushed
  • 1/4 cup unsalted butter, melted
  • 1/4 cup granulated sugar

For the Pistachio Cheesecake:

  • 8 oz (225 g) cream cheese, softened
  • 1/4 cup granulated sugar
  • 1/4 cup pistachio paste
  • 1/2 tsp vanilla extract
  • 1/4 cup heavy cream
  • 1 tsp gelatin powder
  • 2 tbsp cold water

For the Raspberry Center:

  • 1/2 cup fresh or frozen raspberries
  • 2 tbsp granulated sugar
  • 1 tbsp water
  • 1 tsp gelatin powder

For the Green Glaze:

  • 1/2 cup water
  • 1/2 cup granulated sugar
  • 1/2 cup sweetened condensed milk
  • 1/2 cup white chocolate, melted
  • 2 tsp gelatin powder
  • Green gel food coloring

For Decoration:

  • Edible gold leaf
  • Crushed pistachios

Instructions

  • Prepare the Base:
    • In a medium bowl, combine the crushed digestive biscuits (or graham crackers), melted butter, and sugar. Stir until the mixture resembles wet sand.
    • Press the mixture into the bottom of dome molds or individual cheesecake pans to form a firm base. Chill in the fridge for at least 30 minutes to set.
  • Prepare the Raspberry Center:
    • In a small saucepan, combine raspberries, sugar, and water. Heat over medium heat, mashing the raspberries as they soften. Bring to a simmer and cook for 5 minutes.
    • Stir in the gelatin powder, mix well, and allow to cool before filling the center of the cheesecake domes.
  • Make the Pistachio Cheesecake:
    • In a large bowl, beat softened cream cheese with sugar, pistachio paste, and vanilla extract until smooth and creamy.
    • In a separate bowl, dissolve gelatin in cold water and let it bloom for a few minutes. Then, gently heat the mixture to dissolve the gelatin and add it to the cream cheese mixture.
    • Whip the heavy cream and fold it into the cream cheese mixture until fully combined.
  • Assemble the Domes:
    • Spoon the pistachio cheesecake mixture over the chilled base in the dome molds, leaving a small space at the center for the raspberry filling.
    • Add a spoonful of raspberry mixture to the center of each dome. Freeze for at least 4 hours or until completely set.
  • Prepare the Green Glaze:
    • In a small saucepan, combine water, sugar, and sweetened condensed milk. Heat over medium heat, stirring until the sugar dissolves.
    • Stir in the melted white chocolate and gelatin mixture, and then add a few drops of green gel food coloring until you achieve the desired shade.
  • Glaze the Domes:
    • Once the cheesecake domes have set, carefully remove them from the molds and place them on a wire rack over a tray.
    • Pour the green glaze over the domes, ensuring they are evenly coated. Let the glaze set for about 30 minutes.
  • Decorate and Serve:
    • Garnish the domes with edible gold leaf and crushed pistachios for a beautiful finishing touch.
    • Serve chilled for the best texture and flavor.

  • These domes can be made ahead of time and stored in the freezer for up to 1 week before glazing and serving.
