Description

A comforting, cheesy, and hearty twist on classic lasagna! This soup combines all the delicious flavors of lasagna — rich tomato sauce, tender pasta, and gooey cheese — in a cozy, one-pot soup format. Perfect for cold days or whenever you’re craving lasagna without the hassle.


Ingredients

1 lb ground beef (or a mix of beef and sausage)
1 medium onion, diced
2 cloves garlic, minced
1 (28 oz) can crushed tomatoes
1 (15 oz) can tomato sauce
4 cups beef broth (or vegetable broth for a lighter version)
1 tsp dried basil
1 tsp dried oregano
1 tsp dried thyme
½ tsp red pepper flakes (optional, for a bit of heat)
Salt and pepper, to taste
8 oz broken lasagna noodles (or any pasta, like rotini or shells)
1 cup ricotta cheese (or cottage cheese)
1 ½ cups shredded mozzarella cheese
½ cup grated Parmesan cheese
Fresh basil or parsley, chopped (for garnish)

Instructions

Cook the Ground Beef:
In a large pot or Dutch oven, heat a bit of olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks. Once browned, drain excess fat if needed.
Sauté the Aromatics:
Add the diced onion to the pot with the beef and cook for 3-4 minutes until softened. Add the minced garlic and cook for another 1-2 minutes, until fragrant.
Add the Tomatoes and Broth:
Stir in the crushed tomatoes, tomato sauce, and beef broth. Add the dried basil, oregano, thyme, red pepper flakes (if using), and season with salt and pepper. Bring the mixture to a simmer.
Cook the Noodles:
Once the soup is simmering, add the broken lasagna noodles (or preferred pasta). Stir to combine and cook for 10-12 minutes, or until the noodles are tender, stirring occasionally.
Prepare the Cheese Mixture:
While the soup is cooking, in a small bowl, mix together the ricotta cheese, 1 cup of mozzarella, and grated Parmesan cheese. This will be added to the soup to give it that lasagna-like richness.
Add the Cheese:
Once the noodles are cooked, drop spoonfuls of the cheese mixture into the soup. Gently stir to incorporate, letting the cheese melt and create a creamy texture throughout the soup.
Serve:
Ladle the soup into bowls and top with the remaining shredded mozzarella cheese. Garnish with fresh basil or parsley for a burst of color and flavor.
