- 8 mozzarella cheese sticks (string cheese), cut in half
- 1 cup almond flour
- 1 cup crushed pork rinds (or keto breadcrumbs)
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 2 large eggs, beaten
- 1 tbsp heavy cream
- ½ cup grated Parmesan cheese
- Cooking oil for frying (e.g., avocado or coconut oil)
Instructions
- Prep the Mozzarella Sticks:
- Cut the mozzarella sticks in half to create 16 pieces. Place them on a baking sheet lined with parchment paper and freeze for 1-2 hours.
- Prepare the Coating:
- In a shallow dish, mix almond flour, crushed pork rinds, Parmesan cheese, garlic powder, and Italian seasoning.
- In another shallow bowl, whisk the beaten eggs with heavy cream.
- Coat the Mozzarella Sticks:
- Remove frozen mozzarella sticks from the freezer. Dip each stick into the egg mixture, then coat with the almond flour mixture, pressing gently to adhere. Repeat the process for a double coating. Place back on the baking sheet and freeze for 30 minutes to set.
- Cook the Mozzarella Sticks:
- Heat about 1 inch of cooking oil in a skillet over medium heat. Once the oil reaches 350°F (175°C), fry the sticks in batches for 1-2 minutes per side, or until golden brown.
- Remove with a slotted spoon and place on a paper towel-lined plate to drain excess oil.
- Serve:
- Serve hot with marinara sauce or ranch dressing (keto-friendly) for dipping.
