Ingredients

  • 2 cups almond flour (blanched, finely ground)
  • 24 tablespoons cream cheese (softened)
  • 23 tablespoons butter or coconut oil (melted)
  • 2 eggs (beaten, with a little reserved for egg wash)
  • ½ teaspoon salt (plus optional garlic powder, onion powder, or other seasonings)
  • Filling of choice (e.g., cooked ground beef, shredded chicken, cheese, sautéed veggies)

Instructions

  • In a bowl, combine almond flour, salt, and any additional spices. Stir well.
  • Mix in softened cream cheese and melted butter or coconut oil.
  • Add beaten eggs, stirring gently until a dough forms. If the dough is too sticky, add a bit more almond flour; if it’s too dry, add a small amount of cream cheese or water.
  • Chill the dough for 15–20 minutes if needed, then roll it out on a lightly floured surface to about ¼-inch thickness.
  • Use a cutter or the rim of a bowl to cut circles (about 5–6 inches in diameter).
  • Place a spoonful of filling in the center of each circle. Fold over to form a half-moon, then seal the edges by pressing or crimping.
  • Transfer to a parchment-lined baking sheet. Brush the tops with reserved egg wash for color.
  • Bake at 375°F (190°C) for 18–22 minutes or until golden brown, or fry in a skillet with oil for a crispier exterior.
  • Let them cool slightly before serving.

  • For a dairy-free version, use coconut oil and dairy-free cream cheese.
