- 2 tablespoons coconut flour
- 1 tablespoon baking powder
- ¼ cup granulated keto sweetener (plus more for filling)
- ¼ teaspoon salt
- 2 large eggs
- ¼ cup melted butter (plus extra for filling)
- 1 teaspoon vanilla extract
- 2 teaspoons ground cinnamon (for filling)
- (Optional) 1 cup shredded mozzarella cheese, melted and cooled slightly, for a “fathead” style dough
Instructions
- Prepare the Dough
- In a bowl, combine almond flour, coconut flour, baking powder, sweetener, and salt. In a separate bowl, whisk the eggs with melted butter and vanilla extract. If using mozzarella for a fathead dough, melt it in the microwave or stovetop, then blend it into the egg mixture.
- Stir the dry ingredients into the wet until a soft dough forms. If it’s too sticky, add a little almond flour. If too dry, add a splash of melted butter or heavy cream.
- Roll Out and Fill
- Place the dough between two sheets of parchment paper. Roll it into a rectangle, about ¼ inch thick. Brush melted butter over the surface, then sprinkle cinnamon mixed with additional keto sweetener.
- Shape and Slice
- Roll the dough carefully into a tight log. Slice into 8–10 equal pieces using a sharp knife or dental floss.
- Bake
- Preheat the oven to 350°F (175°C). Arrange the rolls in a greased or parchment-lined baking dish. Bake for 20–25 minutes, or until golden brown on top.
- Frost or Glaze
- Let the rolls cool for about 5 minutes. Top with a cream cheese frosting or a simple powdered sweetener glaze. Serve warm.
