For the Chaffle Base:
- 2 large eggs
- 1 cup shredded mozzarella cheese
- 2 tbsp almond flour
- 1/4 tsp garlic powder (optional)

For the Pizza Topping:
- 1/4 cup low-carb marinara sauce
- 1/2 cup shredded mozzarella cheese
- 6–8 slices pepperoni (or your preferred toppings)
- 1 tbsp grated Parmesan cheese
- Fresh basil leaves (optional)
Instructions
1. Make the Chaffle Base:
- Preheat your mini waffle maker.
- In a small bowl, whisk the eggs, then mix in the shredded mozzarella, almond flour, garlic powder, and Italian seasoning until well combined.
- Pour about 1/4 cup of the mixture into the waffle maker and cook for 3-4 minutes, or until golden and crispy. Repeat with the remaining batter to make 2-3 chaffles.
2. Assemble the Pizza:
- Preheat your oven to 400°F (200°C).
- Place the cooked chaffles on a baking sheet lined with parchment paper.
- Spread a thin layer of marinara sauce over each chaffle.
- Sprinkle shredded mozzarella on top, then add pepperoni slices or your choice of toppings.
- Finish with a sprinkle of Parmesan cheese.
3. Bake:
- Bake in the preheated oven for 5-7 minutes, or until the cheese is bubbly and slightly golden.
- Remove from the oven and let cool slightly before garnishing with fresh basil (if desired).
Notes
- You can make the chaffle batter ahead of time and store it in the fridge for up to 24 hours.
- Try experimenting with toppings like sautéed mushrooms, bell peppers, olives, or cooked chicken for variety.
- For extra crispiness, let the chaffles cool on a wire rack before adding toppings.
- Use full-fat mozzarella for the chaffles to enhance the flavor and texture.
- If you don’t have a mini waffle maker, a regular one works fine, though the size may vary.
