  • Author: Freya
  • Total Time: 20 minutes
  • Yield: 2-3 chaffle pizzas 1x

Description

A quick and satisfying low-carb twist on pizza, combining the crispiness of chaffles with your favorite pizza toppings!

Ingredients

Scale

For the Chaffle Base:

  • 2 large eggs
  • 1 cup shredded mozzarella cheese
  • 2 tbsp almond flour
  • 1/4 tsp garlic powder (optional)
  • 1/4 tsp Italian seasoning (optional)

For the Pizza Topping:

  • 1/4 cup low-carb marinara sauce
  • 1/2 cup shredded mozzarella cheese
  • 68 slices pepperoni (or your preferred toppings)
  • 1 tbsp grated Parmesan cheese
  • Fresh basil leaves (optional)

Instructions

1. Make the Chaffle Base:

  1. Preheat your mini waffle maker.
  2. In a small bowl, whisk the eggs, then mix in the shredded mozzarella, almond flour, garlic powder, and Italian seasoning until well combined.
  3. Pour about 1/4 cup of the mixture into the waffle maker and cook for 3-4 minutes, or until golden and crispy. Repeat with the remaining batter to make 2-3 chaffles.

2. Assemble the Pizza:

  1. Preheat your oven to 400°F (200°C).
  2. Place the cooked chaffles on a baking sheet lined with parchment paper.
  3. Spread a thin layer of marinara sauce over each chaffle.
  4. Sprinkle shredded mozzarella on top, then add pepperoni slices or your choice of toppings.
  5. Finish with a sprinkle of Parmesan cheese.

3. Bake:

  1. Bake in the preheated oven for 5-7 minutes, or until the cheese is bubbly and slightly golden.
  2. Remove from the oven and let cool slightly before garnishing with fresh basil (if desired).

Notes

  • You can make the chaffle batter ahead of time and store it in the fridge for up to 24 hours.
  • Try experimenting with toppings like sautéed mushrooms, bell peppers, olives, or cooked chicken for variety.
  • For extra crispiness, let the chaffles cool on a wire rack before adding toppings.
  • Use full-fat mozzarella for the chaffles to enhance the flavor and texture.
  • If you don’t have a mini waffle maker, a regular one works fine, though the size may vary.
