Ingredients

1 cup natural peanut butter
¾ cup Greek yogurt (full-fat preferred)
½ cup raw honey
1 large egg
2 tsp vanilla extract
1¼ cups whole wheat flour
½ tsp baking soda
¼ tsp sea salt
½ tsp cinnamon (optional)


Instructions

Preheat oven to 350°F (177°C). Line a baking sheet with parchment paper.
In a large bowl, mix peanut butter, Greek yogurt, honey, egg, and vanilla until smooth.
In a separate bowl, whisk together flour, baking soda, salt, and cinnamon (if using).
Gradually mix dry ingredients into wet until just combined. Don’t overmix.
Scoop dough using a 1.5 tbsp (#40) scoop and place 2 inches apart on the baking sheet.
Flatten cookies slightly with a fork.
Bake for 10–12 minutes. Rotate halfway through.
Cool on pan for 5 minutes, then transfer to a wire rack.

Notes

Chilling Dough: Chill for 30 mins if dough is too soft.
Texture Tips: For chewier cookies, add 1 tbsp molasses. For cakier ones, add ¼ tsp baking powder.
Storage: Store in an airtight container for 4 days or freeze unbaked dough balls.
