For the Pastry:
- 2 cups all-purpose flour
- 1/2 cup cold unsalted butter, cubed
- 1/4 cup cold water
- 1/2 tsp salt
- 1 sheet puff pastry, thawed
- 1 egg, beaten (for egg wash)
For the Beef Filling:
- 1 lb ground beef or chuck
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp Worcestershire sauce
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1/2 tsp rosemary
- 2 tbsp all-purpose flour (or cornstarch)
- 1/2 cup beef stock
- Salt and pepper to taste
Instructions
- Prepare the Shortcrust Pastry:
- In a bowl, combine flour and salt. Add the cubed butter and mix until the texture resembles coarse crumbs. Slowly add cold water and mix until the dough comes together. Wrap in plastic wrap and chill for at least 30 minutes.
- Make the Beef Filling:
- Heat a skillet over medium-high heat. Brown the ground beef until cooked through, then set aside. In the same skillet, sauté the onion and garlic until soft. Add Worcestershire sauce, tomato paste, thyme, and rosemary. Stir well.
- Sprinkle flour over the mixture, then gradually add beef stock while stirring. Let the mixture simmer until thickened. Season with salt and pepper. Cool completely.
- Assemble the Hand Pies:
- Roll out the shortcrust pastry and cut into circles to fit your pie tins. Line the tins with the pastry. Fill each with cooled beef mixture.
- Cut circles from the puff pastry to cover the pies. Place them on top, crimp edges to seal, and brush with egg wash.
- Bake:
- Preheat the oven to 200°C (400°F). Bake the pies for 25-30 minutes, or until golden and flaky. Allow to cool slightly before serving.

- Make Ahead: Assemble and freeze unbaked pies for up to 3 months. Bake directly from frozen with additional cooking time.
