Description

Crunchy Ramen Slaw is a fresh, Asian-inspired coleslaw packed with toasted ramen noodles, almonds, sunflower seeds, and a tangy sweet-and-savory dressing. This versatile dish is perfect for picnics, potlucks, or as a refreshing side for grilled dishes. Easy to customize and full of texture, it’s a crowd-pleaser every time!

Ingredients

Scale

For the Salad:

  • 1 package instant ramen noodles (flavor packet discarded)
  • 4 cups coleslaw mix (shredded cabbage and carrots)
  • 1/2 cup sliced almonds
  • 1/4 cup sunflower seeds
  • 3 scallions, thinly sliced

For the Dressing:

  • 1/4 cup rice vinegar
  • 1/4 cup granulated sugar (or honey for a healthier option)
  • 2 tablespoons soy sauce (low-sodium preferred)
  • 1/4 cup sesame oil
  • 1/4 teaspoon salt (optional)
  • 1/4 teaspoon black pepper

Instructions

  • Prepare the Ramen and Almonds:
    • Preheat a skillet over medium heat.
    • Break the ramen noodles into small pieces.
    • Toast the noodles and almonds in the skillet until golden and fragrant, about 3–4 minutes. Set aside to cool.
  • Make the Dressing:
    • In a small bowl, whisk together rice vinegar, sugar, soy sauce, sesame oil, salt, and pepper until the sugar dissolves and the mixture is well blended.
  • Combine the Salad:
    • In a large mixing bowl, toss together the coleslaw mix, toasted ramen noodles, almonds, sunflower seeds, and scallions.
    • Drizzle the dressing over the salad and toss to combine.
  • Chill and Serve:
    • Let the salad sit for 10 minutes to allow the flavors to meld. Serve immediately for maximum crunch.

Notes

  • Make-Ahead Tip: Toast the ramen and almonds and prepare the dressing in advance. Combine everything just before serving to maintain the crunch.
  • Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 2 days, though the noodles may lose their crunch.
  • Substitutions: Use gluten-free ramen noodles or rice noodles for a gluten-free option. Replace sugar with honey or a natural sweetener for a healthier alternative.
