1 lb ground beef
5 medium potatoes, peeled and diced
1 small onion, diced
2 cloves garlic, minced
4 cups beef broth
1 cup heavy cream
2 cups shredded cheddar cheese
1 tablespoon butter
1 teaspoon salt (or to taste)
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/4 teaspoon dried thyme
Optional: Green onions or parsley for garnish


Instructions

Cook the Ground Beef:
In a large pot, brown the ground beef over medium heat, breaking it apart as it cooks.
Once cooked through, drain excess fat and set the beef aside.
Sauté the Aromatics:
In the same pot, add butter and sauté the diced onion and minced garlic for 3-4 minutes, until softened and fragrant.
Add the Potatoes and Broth:
Add the diced potatoes, beef broth, and season with salt, pepper, paprika, and thyme.
Bring to a boil, then reduce the heat to a simmer.
Cook for about 15-20 minutes, or until the potatoes are tender.
Combine the Beef and Cream:
Add the cooked ground beef back into the pot.
Stir in the heavy cream and let it simmer for another 5-10 minutes to thicken slightly.
Add the Cheese:
Stir in the shredded cheddar cheese until fully melted and the soup becomes creamy.
Serve:
Ladle the soup into bowls and garnish with chopped green onions or parsley, if desired.
