Apple Carrot Beef Rib Soup with Bacon Bites and Sour Cream

Ingredients

For the Soup:
2 lbs beef short ribs or beef riblets
1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
2 medium apples (peeled and diced)
4 large carrots, peeled and sliced
6 cups beef broth
1 cup water
2 teaspoons fresh thyme (or 1 teaspoon dried thyme)
2 teaspoons fresh rosemary (or 1 teaspoon dried rosemary)
1 bay leaf
1 teaspoon salt (or to taste)
1/2 teaspoon black pepper
1/2 teaspoon smoked paprika
1 tablespoon apple cider vinegar (optional, for extra tang)
For the Bacon Bites:
6 slices bacon, diced
1 tablespoon brown sugar (optional for caramelization)
For Serving:
Sour cream (for garnish)
Fresh parsley or chives (for garnish)
